Lion Bar Rocky Road

Ingredients
- 200g milk chocolate
- 100g dark chocolate
- 100g unsalted butter
- 3 tbsp golden syrup
- 4 Lion Bars, chopped
- 100g digestive biscuits, broken into chunks
- 75g mini marshmallows
- 50g Cornflakes
- Optional: Extra Lion Bar halves, sliced lengthways to expose cross-section
- Optional: White chocolate or caramel drizzle for topping
Instructions
- Line a 20cm square tin with baking paper.
- In a large bowl, mix chopped Lion Bars, broken digestives, marshmallows, and Cornflakes.
- In a saucepan over low heat, melt the chocolate, butter, and golden syrup until smooth. Let cool for 5 minutes.
- Pour the melted mixture over the dry ingredients and stir quickly to combine.
- Press the mixture firmly into the lined tin.
- Top with halved Lion Bars, cut lengthways to show the caramel and wafer inside.
- (Optional) Drizzle with melted white chocolate or caramel.
- Chill for at least 2 hours, preferably overnight, until firm.
- Slice into squares and serve.
Notes
These bars improve with time — store in an airtight container in the fridge and they’ll stay chewy and delicious for up to 5 days. Perfect for transporting to work or slicing ahead of a party!
